An alternative is to choose casein (milk protein) paints, which are shipped as a powder. They tend to be a bit streaky and flat, so you'll need to prime surfaces with a water-based sealant to prevent stains, but they're an excellent choice for chemically-sensitive individuals.

All the advice so far is for water-based paint. If you decide to use an oil-based paint, for example on south-facing window frames, make sure it contains no lead, mercury, cadmium, chromium, or their oxides. Make sure it is formaldehyde-free. Check that the VOC level is low (below 380 grams per liter), and that the paint contains no halogenated solvents. Again, there's an alternative – you can buy citrus-oil paint instead.

Stains

Many traditional stains (and varnishes and sealers) contain carcinogens and toxins such as lead, acetone, and pentachlorophenol. Modern "healthy" alternatives are becoming more easily available and, though they cost a bit more, are an excellent investment.

Water-based and citrus-based finishes are not only better for your health in the long term, but a lot more pleasant to work with. They smell much nicer and are far less likely to give you a headache at the end of a day's work!
